Keep in mind, this recipe counts as your protein and vegetable for one of your meals. However, you can still have a fruit and Melba toast or Grissini Breadstick along with it.

Chicken Bruschetta
- 100 grams - Chicken Breast
- 1 Vine Ripened Tomato (Chopped)
- 2 Garlic Cloves (Minced)
- 3 Basil Leaves (Chopped)
- 1 Pinch - Sea Salt
- 1 Pinch - Black Pepper
- 1 Pinch - Italian Seasoning
- 1 Pinch - Garlic Powder
- 1 Pinch - Onion Powder
- 1 cup Spinach Leaves
Directions:1. Sprinkle Chicken with Italian Seasoning, Garlic and Onion Powder.
2. Grill the Chicken until done.
3. Let stand for 3 to 5 minutes.
4. Combine tomato, garlic and basil.
5. Stir until well mixed.
6. Place Spinach leaves on plate, then place Chicken on top of them.
7. Spread Bruschetta tomato mixture on top of chicken.
8. Use Sea Salt and Pepper to taste.
