HCG Chicken Cacciatore
Here's what you'll need...
- 2 teaspoons - Sea Salt
- 1 teaspoon - Ground Black Pepper
- 1 large - Chopped Red Bell Pepper
- 1 Diced Onion
- 3 Finely Chopped Garlic Cloves
- 1 1/2 cup - Chicken Broth
- 1 28 ounce can - Diced Tomatoes (add juice from can)
- 3 tablespoons - Drained Capers
- 1 1/2 teaspoons - Dried Oregano Leaves
- 1/4 cup - Finely Chopped Basil Leaves
- Crushed Grissini Breadsticks/Melba Toast
Preparation: Sprinkle the chicken pieces with 1 teaspoon of both salt and pepper. Dredge the chicken pieces in the crushed grissini to coat lightly.
Cooking Directions: In a large sauce pan, heat up the Chicken Broth on medium-high. Sauté chicken pieces in the broth until brown - about 5 minutes per side. Add more broth as needed.
Then, remove the chicken after it's done cooking but do not drain anything from the pan. Now add the bell pepper, onion and garlic to the same pan and sauté over medium heat until the onion is tender - about 5 minutes. Season with salt and pepper. Add the remaining broth and simmer for about 3 minutes. Next, add the tomatoes with juice, broth, capers and oregano.After that, return the chicken pieces to the pan, turning them to coat in the sauce. Bring the sauce to a simmer. Continue simmering on medium-low heat until the chicken is just cooked all the way through, then remove. If necessary, boil the left-over sauce until it thickens slightly - about 3 minutes.
To Serve: Drizzle sauce over the chicken, then sprinkle with basil and serve.
